Warm winter salad with poached pears

Ingredients
(Serves 2)
For the salad:
2 mixed peppers
1 red onion
180g baby spinach
Handful of walnuts and pinenuts
200g Feta cheese - cubed
For the poached pears:
2 Pears
250ml red wine
2 tsps cinnamon
1 tsp ginger
1 orange
For the dressing:
French Mustard
2 tsp Honey
Splash of white wine vingear
1-2 cup of olive oil
Handful of chopped basil
Method
Start with the poached pears, slice off the base of the fruit to make a flat surface, place it upright and slice into 3 mm slices. Remove the middle section then add to a saucepan with the wine, cinnamon and ginger. Add the zest from the orange then squeeze it into the saucepan, cook on a high temperature until the pears start to soften.
Whilst your pears are poaching cut your peppers and onions into slices and lay them out across a roasting dish. Pour vegetable oil on top, making sure it is evenly distributed then season appropriately and place in the oven at 160°C for 30 minutes.
After 30 minutes, add the nuts onto your baking tray and proceed to cook them alongside your vegetables for another 10 minutes.
You can now make your dressing. Combine the vinegar, honey, diced basil and mustard in a mug, slowly top up with olive oil making sure to whisk it in to avoid the dressing splitting.
Remove the vegetables and nuts from the oven, place into a plastic mixing bowl and add the baby spinach leaves. Pour the dressing around the inside of the bowl, then work into the salad with your hands.
Place the pear slices on the plate, then add the salad on top, finish by sprinkling the feta cheese over the top.
